The guys behind the Redsn0w jailbreak have just released a version that works with iOS5.
But it's only a tethered jailbreak, which means you'll have to connect your iDevice to your PC each time you reboot.
iOS5 is due for public release in the autumn, but the first beta version is out for developers to test. And that's why the Redsn0w team have produced this jailbreak - so developers of jailbreak apps can test as well.
