Sn0wbreeze has been updated to jailbreak iOS4.3.1 on iPhone iPad and iPod Touch. And here's an excellent how-to video from DinoD7.
Big warning: THIS IS A TETHERED JAILBREAK. That means you will have to connect your device to a PC every time you reboot ie switch your device off and on again. And sn0wbreeze is in beta, so things could go wrong.
